Today, I'm going to make clam kalguksu.

Every neighborhood has a clam kalguksu restaurant. however

Today's clam kalguksu recipe is a recipe for broth that can make it more delicious than a restaurant.

If you follow this recipe, you too can open a clam kalguksu shop.

After the filming, I tasted clam kalguksu made by chef Seunghyun, and it was really good.

Chewy noodles in thick broth. I honestly thought it would be nice to make this and do business.

Today's episode is 'Clam Kalguksu Making'.

 

 


[ingredient]

900g radish, 2 green onions (250g), 100g whole garlic, 2 onions

100g depot, 100g anchovy for soup, 20g dried shrimp

2g of laurel, 6g of black pepper, 14g of Vietnamese pepper, kelp

½ pumpkin, ½ carrot, 1 potato, 1 Cheongyang pepper, kalguksu noodles

 

1. Prepare ½ (900g) radish by cutting it into half moons.

 

2. Cut 2 onions in half and prepare

 

 

Note: According to the size of the anchovy, it is divided into three anchovies (Jiri), 

self-anchovy (Gairi), small anchovy (Koba), and large anchovy (Juba).

 

 3. Put 100g of juba (large anchovy) in a frying pan and stir-fry over low heat.

If you do it on too high a heat, the anchovies will burn. You just need to blow away the fishy smell like this

4. Add roasted juba to 8L of prepared water

 

 5. Put 100g of depot in a frying pan and stir-fry over low heat. If you stir-fry it like this, it will come out a little thicker when you make the broth.

6. Add stir-fried dipori to the broth

 

 7. Add 20g dried shrimp, 14g Vietnamese pepper, 6g whole pepper, and onion skins.

8. Add 900g radish, 2g laurel, 2 onions, 2 green onions, and green onion roots.

 

9. Add 100g whole garlic and washed kelp and boil over high heat.

Bring to a boil over high heat, then reduce to medium heat and simmer for about 50 minutes.

 

​10. Prepare by slicing ½ zucchini, ½ carrot, 1 potato, and 1 Cheongyang pepper

 

 

11. After boiling the broth for 50 minutes, remove the ingredients and add 2 spoons of soup soy sauce and 1 spoon of anchovy fish sauce to the broth.


12. Add 1 spoon of salt and mix well.

 

13. Put 1L of broth in a pot, add the clams, and boil. When the clams are all cooked, take them out.

 

14. Put the potatoes in the boiling broth first and cook them.

 

 
 

15. Rinse the kalguksu noodles under running water to wash off the starch, then put them in the boiling broth and boil them for about 3 minutes.

 

 
 

16. When about a minute left, add the trimmed pumpkin, carrots, potatoes, and Cheongyang peppers and boil.

17. Add 20g of dried shrimp and oysters and boil. Pass if there are no oysters

 

Put the kalguksu in a bowl and place clams on top, and clam kalguksu is complete.
